Vegetable & Lentil Soup
- Carrots chopped
- Tomatoes, diced
- Squash, diced
- Onions, diced
- 1/4 cup lentils
- Black pepper, to taste
- Salt, to taste
- Fresh lemon or lime juice, to taste
- Boil all ingredients together in 4 to 6 cups water
- Add salt and pepper
- Mix everything with a hand blender
- Add lemon or lime juice
- Serve hot.
Quinoa Salad with leeks. tomato, kale, cilantro, cumin and lemon juice.
