Gluten-Fee Pancakes

Ingredients

  • 1 cup chickpea flour (besan)
  • 1/2 cup water (add more as needed to get pancake batter consistency)
  • 1/2 cup chopped red onion
  • 1/4 cup cilantro
  • One (1) egg
  • 1/4 cup grated zucchini
  • 1/4 teaspoon Himalayan salt, or to taste
  • Green chilies *optional
  • 1/4 teaspoon or less red chili powder *optional

    INSTRUCTIONS

    1. Mix chickpea flour with water and egg
    2. Add the rest of the ingredients
    3. Cook pancakes on an iron skillet until light brown
    4. Serve with chutney or eat plain
