Quinoa Salad
Ingredients
- 1/2 cup quinoa
- 1 cup water
- One bunch leeks, chopped
- One tomato, diced
- 1 cup kale or spinach, chopped
- 1/4 cup of cilantro, chopped
- 1/4 teaspoon cumin powder
- Fresh lemon or lime juice
- Black pepper, to taste
- Salt, to taste
DIRECTIONS
- Wash quinoa in a strainer
- Cook it for 10 to 15 minutes, and allow it to cool down
- Add chopped leeks, tomato, kale/spinach, and cilantro
- Add cumin powder
- Add salt, pepper, and lemon or lime juice to taste
- Mix well
- Serve
